A simple one-pot dish for a weekday dinner. It's very easy to make with only a few ingredients and is a healthy meal.
Ingredients:
- 2 cups medium-grain rice
- 400g basa fillet, cut
- 1 onion, finely chopped
- 500ml chicken stock
- 1/2 cup green peas
- 3 cloves garlic, crushed
- Salt to taste
- Pepper to taste
- Oil
- Heat slow cooker on medium heat. Add oil and fry the onions and garlic for a minute.
- Add rice and fry for a minute.
- Add chicken stock and cover. Cook until the rice is soft. It takes about 15-20 minutes. Check regularly. You may need to add some extra water.
- When rice is done, add green peas, basa fillet, salt and pepper and combine together with rice. Cover and cook for 4-5 minutes.
