Today I am going to post a recipe for a beautifully home-baked banana loaf with a light cream cheese frosting. This is a great accompaniment with tea or coffee, You can modify the recipe to adjust the amount of sweetness as desired. I have used a light cream cheese for preparing the frosting. If you like richness, you can use a full-cream cheese.

Banana Loaf with Light Cream Cheese Frosting

Ingredients for banana loaf:
  • 100g unsalted butter, softened
  • 4-5 tablespoon sugar
  • 2 eggs
  • 1 teaspoon cinnamon powder or to taste
  • 1 teaspoon grated lemon zest
  • 2 medium bananas, peeled
  • 1 and 1/2 cup self-raising flour
  • 1/2 cup milk
Ingredients for light cream cheese frosting:
  • 250g light cream cheese, room temperature
  • 1 tablespoon lemon juice
  • 3 tablespoon sugar or to taste
Preparing banana loaf:
  • Cut bananas into 2-inch pieces. Mash the banana pieces using the back of a fork.

  • Cream butter and sugar in a mixing bowl using an electric mixer until the sugar dissolves well.

  • Add 1 egg at a time and continue mixing.
  • Add cinnamon, lemon zest and mashed banana. Gradually add self-raising flour and milk alternatively while mixing.

  • Pour the mixture into a lightly greased loaf pan.

  • Bake in a pre-heated oven of 180°C for about 40-45 minutes or until the top is golden brown.
  • Remove from the oven. Take the loaf out of the pan and cool it on a wire rack.
  • While the loaf is being cooled, start preparing the frosting.
 Preparing the light cream cheese frosting:
  • In a bowl, put the light cream cheese. Using an electric mixer, beat the cream cheese until it is light and fluffy.

  • Add sugar and lemon juice. Mix it until the sugar is dissolved.
Final step - Frosting the loaf:
  • Before frosting the loaf, make sure the top of the loaf is smooth and even for the best result.
  • Put the frosting in the middle of the loaf and spread it evenly on the top and on all sides.

  • Decorate as desired. I simply sprinkled cinnamon and cocoa powder on top.
  • Put it inside the fridge and let it set for at least 2-3 hours before serving.

    I have been thinking about applesauce cake with cream cheese frosting today but I would take a piece of this wonderful banana cake any day. Your photos show your steps to making this banana loaf cake with a nice amount of detail:)
