It's almost summer here in Sydney. During a hot summer day, I don't feel like spending too much time in the kitchen. I need something easy and refreshing. I usually make this salad for my light lunch or even as an entrée.
- A can of crab meat
- 2 potatoes, boiled
- A handful of corn kernels, cooked (you may use canned kernels)
- Rocket leaves (optional)
- 4 tbps mayonnaise
- 1 tbsp lemon juice
- Salt and pepper to taste
- Drain the excess water from the canned crab meat.
- Peel off the skin from the potatoes and cut into cubes.
- Put all the ingredients in a bowl and mix well.
