This is an easy and tasty spicy pork salad recipe I have attempted several times at home and have received great feedbacks from family and friends.
Ingredients:
- 2 kg pork spare ribs with a good layer of skin on top. Try to get ones with less bones.
- One large red onion
- 2 small red chillies
- 5 cloves of garlic
- Small amount of fresh ginger
- Half a bunch of coriander
- Half a bunch of spring onion
- 1/4 teaspoon of turmeric powder
- 1 teaspoon of salt
- Chilli powder depending on taste (optional)
- Good splash of light soya sauce
- 2 tablespoon of oyster sauce
- Boil pork for about 10 minutes in high heat.
- Put it on a tray and throw it in a grill on a medium heat, turning them frequently. Keep them in the grill until the top side and the skin is nicely grilled. It could take about 10-15 minutes.
- Release from the grill and let it cool while we prepare the salad mixture.
- Thinly slice the red onion.
- Slice the red chillies vertically, remove the seeds and chop them finely.
- Grind garlic and ginger in a mortar and pestle or chop them finely.
- Chop the coriander and spring onions finely.
- Once the meat has cooled down a bit, cut them into small pieces. Make sure every piece has a layer of skin attached to it.
- Put the meat and the salad mixture (from step 2) into a bowl. Add turmeric powder, salt, chilli powder, soya sauce and oyster sauce to the mixture.
- Give it a good mix and let it sit for at least half an hour before serving.
- Serve the salad on its own or serve it with a bowl of rice as a main dish.
