Zucchini filled with mince makes a delicious and a healthy meal. You can use any kind of mince. I have used beef for this recipe.
Ingredients:
- 6 small zucchini
- 3 tablespoon oil
- 200g minced beef
- 1/2 finely chopped onion
- 1 clove of garlic, crushed
- Salt and pepper according to taste
- 1/2 teaspoon sesame oil
- Chilli powder according to taste
- Wash zucchini well.
- Cut the zucchini in half lengthwise but don't go all the way through to the end to make sure the zucchini is not separated.
- Scoop out the pulpy centre with a help of a teaspoon and a knife, leaving a narrow space for filling in the mince.
- Finely chop the pulp.
- Mix onion, garlic, salt, pepper, chilli powder, sesame oil, finely chopped pulp with the beef mince.
- Fill the zucchini with the mixture and tie it with a kitchen string.
- On a medium heat, add the oil in a pan.
- Put the stuffed zucchini and cover them.
- Cook them for about 3-4 minutes until the bottom gets brown.
- Repeat the same process on all the sides.
- Cut the string and serve.
